Coconut Curry Soup:
Sautee 1 diced onion

Add in minced garlic and ginger. Sautee a little longer.

Add 2 cans of coconut milk, 1 can of chicken broth, 30oz red curry paste, and whisk together. I like mine more runny so I will fill a can with water and add that too.

Add all veggies and boil until soft. Not to soft.
Potatoes, carrots, bell pepper, cauliflower, broccoli. Anything you want.

When veggies are soft, remove from heat and add in chopped cilantro, green opinion, the zest and juice of 2 large limes, a can of pineapple and as much spinach as you want. If you use fresh pineapple (which taste so much better, add when the veggies are halfway done)
