Unlike some other types of croquettes, these do not use potato but instead a bechamel to create that creamy smooth filling.
In this video I have taken the traditional recipe a step further and added some morcilla (which is a type of blood sausage like Black Pudding), which you could substitute with some black pudding. I have also boosted the flavour with some white truffle oil, making these croquetas out of this world.
Once you learn the base recipe for this you can start to play around with the flavours and make all kinds of variants too!
